Baked Oatmeal




On these chilly fall mornings, my family really likes to eat a bowl of baked oatmeal. This particular recipe comes from my mother-in-law. I think it might be A's favorite breakfast. I put it together the night before, then run down in the morning to pop it in the oven and run back up to crawl back into bed until its done. Mmmm, it smells so good baking. It's cheap, hot, and filling. Perfect!

Baked Oatmeal

1/2 c. melted butter (I usually use a little less and sometimes its just softened-I don't think it matters that much)
1 c. brown sugar
2 eggs, beaten
3 c. oatmeal (I use quick oatmeal)
2 tsp. baking powder
1 tsp. salt
1 c. milk
1/2 tsp vanilla or maple flavoring
1 tsp. cinnamon
frozen fruit (I used blueberries)

Mix and bake in a 9"x9" pan and 350° for 40-45 min. A double recipe would fit in a 9"x13" pan. We cut it into squares, but you could just scoop it up. I serve it with milk poured over it. Yummy!

  1. I like the idea of baked oatmeal but mine has turned into a hockey puck more than once! I'll have to give your recipe a try. And the pumpkin cookies look good too! (It's baking and warm oatmeal weather now isn't it?!)

  2. I just made the pumpkin cookies. Oh, my. They are good. I have 7 kids here right now and they all loved them. Great fall/holiday cookie.
